Born in Montargis, France, Fabrice Prochasson is the author of the book “Loiret & Gourmandises” which is a tribute to his mother's kitchen that inspired him and introduced him to the world of gastronomy. He was named one of the Best Laborers in France in 1996 and President of the Association Les Torques Françaises in 2007, which provides opportunities for young talents to make a name for themselves through their competitions. He is also vice president of the Culinary Academy of France, of which he has been an emeritus member since 2011.
With more than 40 years of experience, creator of the so-called "Latin American sushi" Iwao Komiyama introduced American sushi and Japanese haute cuisine to Argentina. He is the only Itamae in Argentina: a master with honors in the culinary arts of Japanese cuisine. His extensive curriculum includes ownership of Iwao Sushi & Cuisine, serving as a judge and giving master classes in culinary schools around the world, as well as conducting television programs for El Gourmet channel and authoring the books “Cocina Oriental”, “Sushi by Iwao Komiyama” and “From Tokyo to America”. In 2017, he was named "Honorary Gastronomic Ambassador of Japan" by the Japanese government
A graduate of Luis Irizar's School of Cooking in Spain, Chef Alonso served as Executive Chef of Tezka restaurant in Mexico City for eight years under Chef Juan Mari Arzak, renowned for his Three Michelin Star restaurant Arzak in San Sebastian, Spain. His vast experience and prestige led him to spend three years in charge of special events for the Spanish Embassy in Mexico. Mikel Alonso is also co-owner of Biko, a self-described ‘gachupa’ cuisine restaurant listed among the most prestigious “The S.Pellegrino World's 50 Best Restaurants" in the world and in Latin America. He is currently Chef Advisor of Cocina de Autor restaurant at Grand Velas Riviera Maya.
Born in Salerno, Italy on June 5, 1972, he discovered his passion for cooking while working with six friends at a restaurant-bar over the summer, during his time studying at the Eastern Autonomous University of Naples. In 2006, he moved to Singapore and then to South Korea. Two years later he opened a restaurant in Los Barriles in Baja California Sur. In the winter of 2012 he moved to Toronto, Canada to work with Chef Mike Di Biase in his Italian restaurant. After a year and seven months in Abu Dhabi as Executive Chef of Italian the Food Industry, he spent three years in charge of Tavola restaurant at the International Fairmont Princess in Acapulco. Today, he is the Chef of Lucca Restaurant at Grand Velas Los Cabos.
A graduate in Culinary Arts from the University of the Americas in Puebla and born in Apizaco, Tlaxcala, Francisco Molina has worked at the renowned Pujol and Biko restaurants. He later became an entrepreneur and chef at Evoka, a restaurant founded upon the cuisine of the Tlaxcala Valley, which is included on the La Liste world ranking of restaurants. His dedication has led him to national festivals and conferences such as Millesime, Parallel and COME Jalisco, as well as a cultural exchange with France. His youth and effort form what is, to date, one of the best-known success stories in the national culinary landscape.
